Quick and Easy Ham and Broccoli Casserole

Let's put that leftover ham from Easter dinner to good use. If you haven't put it together yet,
we LOVE casseroles, LOL!!!

One dish, vegetables and all. That's my kind of meal!
This is another favorite of my kids, it's very easy and it taste good too!

What you need:


  • 1 (16 ounce) package frozen  Seasoned French fries

  • 1 (16 ounce) package frozen chopped broccoli1

  • 1/2 cups cooked, chopped ham


  • 1  can condensed cream of mushroom or cream of celery soup


  • 1  cup milk


  • 1/4 cup mayonnaise


  • 1/2 cup grated Parmesan cheese


  • 1/2 cup shredded sharp cheddar cheese


  • Side Note: I chop my broccoli fine so kids will eat more.




  • Directions:
    1. Preheat oven to 375
    2. Spray a 9x13 inch baking dish with cooking spray.
    3. Cover bottom of dish with layer of French fries. Add a layer of broccoli, then sprinkle ham evenly over broccoli. Sprinkle half the cheddar cheese.
    4. In a small bowl mix together soup, milk and mayonnaise.
    5. Pour mixture evenly over ingredients in baking dish and sprinkle with cheeses.
    6. Bake uncovered  for 40 minutes approx. or until brown and bubbling.
    Variation: I sometimes add velveta cheese to soup, milk and mayo for a more cheesy flavor.
    We also LOVE Cheese LOL!!!

    Serve with rolls and ENJOY!!
