Bacon Broccoli Slaw

As the summer get closer and it gets hotter I like to make some lighter dishes. I first tasted this slaw at Walmart from the deli. It was surprisingly very good. Unfortunately they didn't know how they made it because it came prepackaged ready to mix. So I got to thinking hummmm how can I duplicate this..... Well, this is my rendition of their Broccoli Slaw.

Ingredients:

8-10 slices of bacon
1 large head of broccoli
1/2 cup red onion chopped fine
1/3 cup golden raisins
1/3 cup sunflower seed kernels
1/3 cup mayo
3 tbsp balsamic vinegar (white)
2 tbsp honey
salt & pepper to taste

Directions:
  1. Cook and crumble bacon
  2. Cut and chop broccoli
  3. Mix broccoli, raisins and onions in medium bowl
  4. In small bowl mix mayo, vinegar, honey and salt/pepper
  5. Pour dressing over broccoli, toss to coat evenly
  6. Add bacon and serve
This is a great side dish for any summer meal. It is also a perfect dish for cookouts and entertaining. Enjoy!!

BLT Pasta Salad

This is a very lite healthy dish and very tasty. You can serve it as a main dish or a side dish. You an also add chicken to it for a more filling main dish. It's quick, easy and most of the ingredients you probably already have. Enjoy!


Ingredients
  • 2 cups of pasta (bow tie, spiral, shell)
  • 1 lbs cook and crumbled bacon
  • 1 med-large chopped tomato
  • 3 cups torn or chopped Romaine lettuce
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup any variety of Ranch Dressing (Lite, Fat Free, 3 Cheese, etc)
**Chicken BLT Pasta Salad Add 1 1/2 cup cooked chopped chicken breast or Diva Style 1 can of chicken

Directions
  1. Cook pasta, drain and place in large bowl
  2. Add bacon, tomato, cheese and dressing
  3. *Chicken BLT Pasta Salad* Add Chicken
  4. Chill in the refrigerator for at least an 1 hour
  5. Mix in lettuce before serving
Serve with bread sticks ENJOY!!!

Kickin Cobb Salad

Nothing like a good salad especially one with a little kick. I can eat a salad everyday, I love it loaded with lots of veggies, cheese, bacon, you name it I like it. LOL This is so easy and a lite alternative to the traditional meat and potato dinner..

What you need...
2 pkg. (10 oz. each) mixed baby salad greens 
8 oz. Seasoned Chicken Breast Strips
4 boiled eggs, chopped
1 can  (15 oz.) black beans, rinsed
1 cup Mexican Style Finely Shredded Four Cheese
12 slices  Bacon, cooked, crumbled
2 small avocados, sliced
2 cups  halved cherry tomatoes
2/3 cup Ranch Dressing
1/3 cup Thick 'N Chunky Salsa medium or hot
 
Directions:
PLACE greens in large patter.
ARRANGE next 7 ingredients in rows over greens.
MIX dressing and salsa; drizzle over salad just before serving.

Spinach Mandarin Bacon Salad

There is one thing I love and that is a good salad. I can eat salad at every meal loaded with lots of veggies, meat, fruit and lots of dressing.... which defeats the purpose of eating a salad! LOL!!! This salad is always a hit at dinners and cookouts. Try it, your family will love it and so will you!!!

List:

1/2 lb. bacon, cooked and crumbled
1 sm  pkg. sliced almonds
1 (10 oz.) bag fresh spinach, washed
1 can mandarin oranges, drained
1/2 red onion, sliced
1/4 cup feta cheese crumbles

Directions:
  1. Cook bacon until crisp. Drain, crumble and set aside. 
  2.  In a large bowl, toss spinach and oranges.
  3. Chill in the refrigerator for 1-2 hours
  4. Add remaining ingredients
  5. Serve with a raspberry vinaigrette.

Layed BLT Ceasar Salad

It's Hot outside and you don't feel like cooking a heavy dinner right? Well, at least I don't! How about a nice tasty salad?
I love salad, especially in the summer time when it's just to hot to cook a full meal. This salad is a BLT minus the bread and more veggies.  Very tasty and fulfilling, my kids love it!! It's a great alternative to the norm and you can use low cal/fat free dressings and cheese to cut some calories. This is a great dish to make for BBQ's and entertaining.

What You Need
1 Bag Romaine lettuce
2 cups  Halved Cherry Tomatoes
2 cups Croutons
6 Boiled Eggs, chopped or sliced
8 slices Turkey Bacon, cooked, crumbled
1 cup Shredded Colby & Monterey Jack Cheeses
1 8oz bottle Caesar Dressing

Make It


PLACE  lettuce in bowl, pour dressing over lettuce and shake until all leaves are coated.
PLACE lettuce in serving bowl
LAYER all ingredients 
DRIZZLE with a little dressing just before serving

ENJOY as a lite dinner or as a side dish!!
