Easy Shrimp Chowder

Nothing like a warm bowl of soup to warm the soul on a cold rainy day. If you like clam chowder you will love this rendition of shrimp chowder. It is Diva simple and ooooh so tasty!!!

What you need.....
  • 1/2 cup -1 cup onion, chopped (Depending on your preference)
  • 2 tbs butter
  • 1/4 tsp Old Bay Seasoning
  • 2 (10 3/4-ounce) cans cream of potato soup (do not dilute)
  • 3 1/2 cups milk 2% or whole
  • 1/4 tsp ground red pepper
  • 1 1/2 pounds medium-size frozen shrimp, thawed, peeled and deveined 
  • 1 cup shredded Monterey Jack cheese
  • Salt & pepper to taste
  • Parsley
Directions:

  • Melt butter in a large pot over medium heat

  • Add Old Bay, onion and shrimp, saute until tender and pink.

  • Stir in cream of potato soup, milk, and pepper; bring to a boil.

  • Reduce heat, and simmer, stirring often, 5-8 minutes.

  • Stir in cheese until melted. 

  • Serve immediately with oyster crackers and garnish with parsley.
