Cheezy Potato Casserole-TDSD #1

Thanksgiving will be here before you know it and if you are not thinking about your Thanksgiving Day menu you better get on it. I will be posting a few of our favorite side sides to give you all some variety and to try something different. Let me know how it turned out and what you thought.

Thanksgiving Day Side Dish (TDSD) #1

What you need...
  • 1 pound processed cheese food, cubed

  • 1 pint sour cream

  • 1 cup Shredded cheddar cheese

  • 1 sm/med onion, finely chopped

  • 1 pound bacon, cooked crisp and chopped

  • 1 (2 pound) package frozen hash brown potatoes, thawed

  • 2 cups crushed potato chips

  • 1/2 cup melted butter

  • Chopped green onion (Optional)

  • Salt and Pepper to taste


  • Directions:
    1. Preheat oven to 350 
    2. In a large mixing bowl combine onion, sour cream, processed cheese, salt and pepper.
    3. Press the excess water out of the hash browns and then add them to the soup mixture and mix well.
    4.  Transfer to a 9x12 inch casserole dish.
    5. Sprinkle bacon on top.
    6. Sprinkle shredded cheese on top.
    7. Sprinkle potato chips on top, then drizzle with butter.
    8. Bake in preheated oven for 45 minutes to 1 hour, until golden brown.
    Sounds yummy and I am sure it will be a kid pleaser!!!
