Homemade Ice Cream Cake

My all time favorite cookie is Oreos. I love separating the cookie and eating the icing then the cookie yummmm. Brings back childhood memories. My second favorite dessert is Oreo ice cream, the more cookies the better. My cousin Dominique from Charleston made this ice cream cake for us and I absolutely loved it. I was blown away how easy it was to make. The price of an ice cream cake can run you $20 or more at your local ice cream shop. This recipe will cost you about $7 or less depending if you are A Shopping Savvy Diva taking advantage of coupons and sales.

I know you will enjoy this recipe. It's quick and easy to make. Be creative and try some different flavors of ice cream and different varieties of cookies. The combinations are deliciously endless!!!!


What you need:
1 gallon any flavor ice cream (she used cherry vanilla)
1 package Oreo cookies (3 rows/crush each row and set aside separetly)
1/4 cup melted butter
1 container whipped topping
Directions:
 -Place ice cream in refrigerator to soften.
*Diva Tip: if time is an issue thaw ice cream in the microwave in 30 sec intervals.
-Set aside 2 rows of Oreos.
-Take 1 row of Oreos and place in a large plastic bag. Crush with a rolling pin or frying pan.
-Mix crushed Oreos with melted butter and pat into the bottom of a 10-inch spring form pan or a casserole dish
-In a bowl gently stir ice cream to soften it.
-Add whipped cream.
-Add 2nd row of Oreos (crushed) to ice cream and mix well.


-Spoon ice cream on top of Oreo crust. Smooth top with the back of a spoon or spatula.
-Decorate the top with whole or halved Oreos and some crushed Oreos using the 3rd row.
-Cover cake with foil and place in freezer for about 3-4 hours.
-Soften about 5 minutes before serving.
