Crunchy Potato Casserole

A friend (Doris G) reminded me that this is "Meatless Monday" and to stay with the program!!! So in order to stay with the program and keep my Diva's happy..... It's Meatless Monday!!! Whooohooo!!! 
She also suggested I share this recipe. This casserole is very versatile, it can be a meal, or a side, enjoyed as dinner or as breakfast. My suggestion.... cook it for dinner and have the left overs for breakfast. There you go 2 for 1..... Divalicious!!!


  • 1 (20 ounce) package frozen hash brown potatoes, thawed

  • 1 cup melted butter, divided

  • 1 teaspoon salt

  • 1/4 teaspoon ground black pepper

  • 1/2 onion, finely diced

  • 1 (10.75 ounce) can condensed cream of chicken soup

  • 1 pint sour cream

  • 2 cups shredded sharp Cheddar cheese

  • 1/4 cup corn flake cereal

  • Directions:
    1. Preheat oven to 350 
    2. Lightly spray casserole dish
    3. In a large bowl, mix together the hash brown potatoes, 1/2 cup butter, salt, pepper, onion, cream of chicken soup, sour cream and Cheddar cheese
    4. Spoon mixture in casserole dish
    5. In a medium bowl, mix the corn flake cereal and remaining butter
    6. Sprinkle over potato mixture
    7. Bake 45 minutes or until brown and bubbling
    Serve with salad and fruit.
