Easy Chicken Tacos

So, my family and I gave up red meat for Lent so I am taking chicken to another level just so we don't get bored with eating chicken the same way for 40 days lol... I thought let's try some chicken tacos with that rotisserie chicken I already have that was on sale because it was after 6pm and that's when they usually start marking down the chickens in the deli FYI. They freeze well also. If my kids like it it's a thumbs up and if I can incorporate some veggies yeah me!! Try it for yourself, they are yummy......

Ingredients
  • 1/2 cup ranch dressing
  • 1/4 cup sour cream (reduced fat or fat free)
  • 1 (1 ounce) packet taco seasoning mix, divided
  • 1 1/2 cup chunky salsa (Use hot salsa for a spicy kick), divided
  • 2 cups shredded or chopped rotisserie chicken
  • 8 (6 inch) corn tortillas
  • shredded lettuce
  • 1 cup shredded Colby-Monterey Jack cheese
  • green onions, sliced (Optional)
  • sliced black olives (Optional)
  • sliced jalapenos Optional)
Directions
  1. Combine ranch dressing, sour cream, 1 teaspoon taco seasoning, and 2 tablespoon salsa in a small bowl. Cover and refrigerate until serving.
  2. In a medium bowl toss chicken with remaining taco seasoning. Cover bowl and microwave chicken until chicken is heated through, about 2 to 3 minutes.
  3. Warm the tortillas in a microwave for about a minute to make them pliable.
  4. Place a scoop of chicken on the tortilla and top with lettuce, salsa, green onion, olives, jalapenos, cheese, and a spoonful of the ranch dressing mixture.
Serve with Mexican corn, refried beans and maybe some chips and salsa.
