Sloppy Joe Pockets

Here is a great recipe to cook with the kids. If they like sloppy joes they will love these sloppy joe pockets. With less than an hour from start to finish everyone will be happy!

Ingredients:
  • 8 ounces ground beef/turkey

  • 1can Sloppy Joe Sauce

  • 1 large egg

  • 1 tablespoon water

  •  All-purpose flour

  • 1 can (16.3-ounce) refrigerated biscuits

  • 3/4 cup shredded mozzarella cheese

  • Directions:
    • Preheat oven to 350 degrees F.
    • Line a baking sheet with aluminum foil, spay a little oil on foil & set aside.

  • In a medium saucepan brown ground meat

  • Stir in sloppy joe sauce, remove saucepan from heat.

  • In a small bowl beat together egg and water & set aside.

  • Lightly sprinkle flour on a flat surface and onto a rolling pin. Roll out each biscuit to make a 4-inch circle, turning the biscuit with each roll so it doesn’t stick. (If dough starts to stick, use more flour.)

  • For sandwiches, spoon meat mixture and cheese on one side of each biscuit circle.

  • Using a pastry brush, brush a thin layer of the egg mixture around the edge of each dough circle.

  • Fold dough over meat mixture to form a half-circle. Pinch edges together to seal. Place on prepared    baking sheet.

  • Lightly brush the top of each sandwich with more of the egg mixture.

  •  Bake for 13 to 15 minutes or until brown

  • Makes 8 pockets

  • DivaTip: To make pleats in the crust like in the photo, have an adult use clean kitchen shears or scissors to cut small slits around the edges of the unbaked crust after sealing.
