Mandarin Orange Parfait

I love Parfaits, especially in the summer time! They are so cool and refreshing and a great alternative to ice cream.


These parfaits are so refreshing and tasty not to mention they are healthy for you. I am a big fan of the McDonald's Parfait, if you have not tried it I encourage you to do so and try this very easy and delicious recipe to make your own. I grew up loving orange creamsicle ice cream bars, there is nothing like it. This recipe reminds me of the old fashion orange creamsicle bars with a twist of flavor. Follow this recipe and you to will be hooked. The kids will also love it. These parfaits can be served anytime, breakfast, snack or as dessert. You decide lol!!!

Ingredients

  • 2 envelopes orange flavored gelatin
  • 1/2 cup orange juice
  • 1 cup fat-free milk
  • 1 (8 ounce) package reduced-fat cream cheese, cubed
  • 1/3 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon grated orange peel **Optional
  • 1 (11 ounce) can mandarin oranges
  • 1 (20 ounce) can unsweetened crushed pineapple, drained
  • 1 (8 ounce) container reduced-fat frozen whipped topping, thawed
  • 1 cup chocolate graham cracker crumbs, divided

Directions

  1. In a small bowl, combine gelatin and orange juice; let stand for 5 minutes.
  2. Heat milk until boiling; add to gelatin. Cool slightly. Transfer to a blender; cover and process for 30 seconds or until blended.
  3. Add the cream cheese, sugar, vanilla and orange peel; blend until blended.
  4. Drain oranges, reserving juice; set oranges aside.
  5. Add pineapple and reserved juice to gelatin mixture; blend until smooth.
  6. Fold in whipped topping.
  7. Place half of the oranges in eight parfait glasses. Layer with half of the gelatin mixture and 3 tablespoons of cracker crumbs.
  8.  Repeat layers of gelatin and crumbs; top with remaining oranges.
  9. Chill for 4 hours. Sprinkle with remaining crumbs.
