Chicken Pasta Salad

It's hot, you're tired and you don't feel like a heavy meal. Here is the perfect light meal for you and your family. This dish would also be great for picnics or a main dish at a bridal/baby shower. Don't forget the leftovers, they are perfect for lunch at work.  Did I mention we can do this "Diva Style"?
That's right... quick, easy and scrumptious!

Ingredients:

  • 14 ounces rotini whole wheat pasta

  • 2 cucumbers, chopped

  • 1/4 cup red onion, finely chopped

  • 10 cherry tomatoes, sliced

  • 3/4 cup pitted black olives, sliced

  • 1/2 cup feta cheese

  • 1lbs. grilled chicken strips

  • Diva Tip * buy a bag of cooked grilled chicken strips in the freezer section thaw on a tabletop grill or in microwave.

  • 1 cup Italian salad dressing (light or fat free dressing Optional)

  • salt & pepper to taste


  • Directions:
    1. Cook pasta. Drain and cool by running under cold water.
    2. Cook chicken ( use a stove top grill to cook chicken)
    3. Combine pasta with the cucumbers, onion, tomatoes, chicken, cheese and olives in a large bowl.
    4. Pour the Italian dressing over the salad and mix.
    5. Cover and refrigerate for at least two hours before serving.
    Simple Divalicious!

    1. Yum! I know it's really a summer food, but I might make this this week. I've been craving pasta recently, but I didn't want to make a mayo-heavy pasta salad. I like this alternative!
