There is one thing I love love and that is SEAFOOD! Any kind and most anyway. LOL! I have been toying around with a crab cake recipe and I think I have perfected it. With this recipe you can substitute salmon or tune for the crab meat. A very versatile recipe I must way and very tasty. Oh yeah It's got a lil kick, if you don't like spicy just minimize or omit the hot sauce.
Ingredients:
1 lb fresh crab meat, cleaned and flaked or approx 16oz of canned crab meat
1 can salad shrimp
½ cup green pepper, finely chopped
1/4 cup onion finely chopped
1 large egg, beaten
1 tsp spicy mustard
1/2 tsp hot sauce
3/4 cup plain dry bread crumbs, divided
oil for frying
Directions:
In a large bowl mix crab meat, shrimp, pepper, onion, egg, mustard, hot sauce and 1/2 cup bread crumbs.
Shape crab mixture into hamburger style parties, coat with remaining crumbs.
Prepare skillet with oil over medium heat.
Cook crab cakes 3 to 5 minutes on each side or until done and browned. Drain on paper towels.
Serve warm.
Serve with salad, bon appetit!
