Nothing like a warm bowl of soup to warm the soul on a cold rainy day. If you like clam chowder you will love this rendition of shrimp chowder. It is Diva simple and ooooh so tasty!!!
What you need.....
- 1/2 cup -1 cup onion, chopped (Depending on your preference)
- 2 tbs butter
- 1/4 tsp Old Bay Seasoning
- 2 (10 3/4-ounce) cans cream of potato soup (do not dilute)
- 3 1/2 cups milk 2% or whole
- 1/4 tsp ground red pepper
- 1 1/2 pounds medium-size frozen shrimp, thawed, peeled and deveined
- 1 cup shredded Monterey Jack cheese
- Salt & pepper to taste
- Parsley
Directions:
Melt butter in a large pot over medium heat
Add Old Bay, onion and shrimp, saute until tender and pink.
Stir in cream of potato soup, milk, and pepper; bring to a boil.
Reduce heat, and simmer, stirring often, 5-8 minutes.
Stir in cheese until melted.
Serve immediately with oyster crackers and garnish with parsley.
