Ingredients
- 1/2 cup ranch dressing
- 1/4 cup sour cream (reduced fat or fat free)
- 1 (1 ounce) packet taco seasoning mix, divided
- 1 1/2 cup chunky salsa (Use hot salsa for a spicy kick), divided
- 2 cups shredded or chopped rotisserie chicken
- 8 (6 inch) corn tortillas
- shredded lettuce
- 1 cup shredded Colby-Monterey Jack cheese
- green onions, sliced (Optional)
- sliced black olives (Optional)
- sliced jalapenos Optional)
Directions
- Combine ranch dressing, sour cream, 1 teaspoon taco seasoning, and 2 tablespoon salsa in a small bowl. Cover and refrigerate until serving.
- In a medium bowl toss chicken with remaining taco seasoning. Cover bowl and microwave chicken until chicken is heated through, about 2 to 3 minutes.
- Warm the tortillas in a microwave for about a minute to make them pliable.
- Place a scoop of chicken on the tortilla and top with lettuce, salsa, green onion, olives, jalapenos, cheese, and a spoonful of the ranch dressing mixture.
Serve with Mexican corn, refried beans and maybe some chips and salsa.
